His & hers poolside pork tacos 🌮
I ate these almost every day for lunch. They had a pineapple salsa at the bottom that was scrumptious and totally made up for the fact that the tortilla chips were fried in oil that was clearly too tepid 😑
Avocado toast 🥑
Grilled Rustic Bread, Roasted Tomato, Furikake, Jade Sauce, with a poached egg. The tomatoes on Maui are sweeter than in California and the furikake brought a garlic energy. The fruit salad featured longan - a new (to me) fruit - it’s part of the soapberry family like a lychee. Tasted like a cantaloupe 🍈
Scrambled eggs & Croissant 🥐
Room service breakfast - the greatest joy in this world.
Filet Mignon
With lilikoi au poivre + rosemary potato 🥔 at Koast
Wagyu Zabuton Tataki
With cacao, ginger + scallion (also at Koast). According to my google search, Zabuton steak, is a relatively new and lesser-known cut of beef that comes from the chuck primal, specifically from the shoulder blade of the cow. It's a highly marbled cut, which gives it a rich, beefy flavor and tender texture. It was super flavorful and carried the marinade beautifully.
Milk Bread
Mark’s religion is table bread. He always breaks it, blesses it, and believes in second helpings 🙏🏻 This was served with salted butter and kaya - a coconut jam / sweet spread made from a base of coconut milk, eggs, and sugar. It tasted like honey butter.
Ember Roasted Hawai’i Sweet Potatoes
These were the vegggie of the day at Koast (can you tell I really liked this meal?) served with onions two ways - roasted and crisped.

Author’s note: one of the best things I ate on Maui was a filet mignon salad from Tommy Bahama restaurant (yes, really) with Baby Greens, Campari Tomatoes, Crispy Frites, Roasted Shallots, Garlic Aïoli, and a Tamarind Vinaigrette that I will dream about for a long time - but alas, no photo 😭
