Brian Lagerstrom released a new recipe, a spicy rigatoni pasta bake that combines the best of his baked spaghetti alongside the Calabrian chilis from his chicken parm and then some heavy cream à la vodka sauce. We absolutely had to make it.
Spicy Rigatoni
This dish delivered on its promise. It calls for hot Italian sausage, but we all agreed a mild Italian sausage (that would more likely have fennel and other herb flavors) would be a better pairing here as the Calabrian chilis are already brining the heat. But we will definitely be making this again and again.
Arugula Salad
Gotta have some greens. This was arugula, shaved parm with some salt and olive oil. I forgot to add some lemon juice, but it was still a nice bitter companion to the heat of the pasta.
Strawberry Scones
These use my all time favorite scone recipe with fresh strawberries we picked up at Costco. They are perfect.
Carrot Cake
Peach bought a metric ton of carrots at Costco last week, and I needed updated photos of my carrot cake for our cookbooks, so say hello to my all time favorite carrot cake recipe. It is also from Brian Lagerstrom. It does not have any raisins or nuts inside the cake, just pecans (untoasted) on the outside. The cream cheese frosting is the real star here, tangy without being too sweet.
