Inspired by Peach last week, Mark and I have been on a sheet pan kick ever since! So this week, we found a recipe in Melissa Clark’s aptly named β€œDinner” Cookbook. For dessert this week, we went with a the very ripe bananas we had on hand and a citrus cake to take advantage of citrus season 🍊

Harissa Chicken with Leeks

Chicken thighs, leeks, potatoes, harissa, fresh herbs and salted yogurt. Roast the chicken and potatoes first for 20 minutes, then add the leeks and cook for another 20 minutes. It’s that easy! The fresh herbs and yogurt really balance this dish out.

Orange Yogurt Cake

This cake is made with orange (zest & juice) and yogurt. To serve it, I topped it with more yogurt and a slice of orange. This ultimately resulted in a too tangy dessert - I should have added honey to add more sweetness, or forgone the yogurt. In any event, the cake was tasty on its own.

Banana Muffins

I went with this King Arthur recipe, that is hosted on NYTimes cooking. I used apricot jam instead of some of the sugar for added flavor.
