Brown Butter Rice Krispie Treats

Instructions

Prep: Butter a 9x13-inch pan (or coat with nonstick spray) and set aside.

Brown the butter & melt the marshmallows: In a large pot over medium-low heat, melt the butter. It will foam, then turn clear and golden, and finally begin to brown and smell nutty — stir frequently, scraping up any bits from the bottom. Don't walk away: the window between perfectly browned and burnt is less than a minute. As soon as the butter is a deep golden brown, turn off the heat and stir in the marshmallows. The residual heat should be enough to melt them; if not, turn the heat back on low and stir until smooth.

Finish: Remove from the heat and stir in the salt and cereal until evenly coated. Quickly press the mixture into the prepared pan (a sheet of parchment spritzed with oil works great for pressing it firmly into the corners, though a silicone spatula does the job too). Let cool completely, then cut into squares.

Tip: Mix in dried fruit (like strawberries) or use colored Rice Krispies for a fun twist.
