Pie Dough
Instructions
Make the dough: Whisk together the flour, sugar, and salt in a large bowl. Add the chilled butter and use a pastry cutter, then your fingers, to work it into the flour until the pieces are roughly pea-sized. Add the ice water gradually, mixing until all the flour is hydrated and the dough comes together into a cohesive mass when squeezed — you may need slightly more or less than ¼ cup.
Chill: Shape the dough into a disc directly in the bowl and wrap tightly in plastic wrap. The flatter the disc, the faster it chills. Refrigerate for at least 1 hour or up to 2 days.
When ready to use, roll out on a lightly floured surface.
