Every summer Peach makes Jam. This year, he made a very tart plum jam that reminded him of cranberry sauce, which naturally led him to crave thanksgiving foods. So here we are, enjoying the many delicious dishes traditionally saved for a cold November evening in June.

This meal was also the first one we all shared after our very dear Panda crossed the rainbow bridge 🌈 There really aren’t any words that capture her spirit or do justice to the impact she had on all of us. She was simply the greatest. I know that she would have loved this meal (even though there wasn’t any dessert) and I will miss sharing meals with her, sitting next to us at the table, most of all 💔

Roast Chicken

Peach bought these at Costco and roasted them with herbs and stuffing in the bird for roughly two hours. I think we might serve chicken at Thanksgiving this year it was so good.

Stuffing

Old bread, herbs and spices with chicken stock and chicken juices - what could be bad? Peach made some in the bird and some in a roasting dish. The roasting dish version was definitely a little drier, but that just lead to crispier bread which was also delicious.

Green Beans & Shallots

I love a dish where the title is also the full ingredient list. I am sure he used a fat (butter or oil) to cook these, but it was really all about the beans and shallots.

Sweet Potato

Sweet potatoes, maple syrup and I think just about every spice Peach keeps in his kitchen. These were so flavorful and delicious. We didn’t make a dessert because these played that role without being cloyingly sweet.

Mashed Potatoes

I have no idea what he put in these, but they were textbook; when you think of mashed potatoes, this is what you’re tasting.
