It was another Saturday-instead-of-Sunday week for us. Jake and Amanda are headed out somewhere east of California for a family vacation, so dinner on Saturday it is! We made a summer classic: steak and salad(s). The whole menu only works because of summer’s beautiful produce bounty β˜€οΈ

NYStrip Steak

The process here is: 1. Buy prime grade beef at Costco. 2. Dry brine in the fridge with salt for 24-48 hours 3. Cook in a 250Β° oven until the meat reaches 115Β° 4. Sear on a ripping hot (500-600Β°) cast iron until edges are crispy 5. Enjoy πŸ˜‹

Corn Salad

This corn salad is such an easy and delicious way to celebrate summer corn and tomatoes. The recipe is from Smitten Kitchen but I doubled it this week as we got twice as much corn from Costco this week.

Caprese Salad

This salad will persist as long as the heirloom tomatoes continue to be so delicious - they even smell like tomatoes they’re so perfect. This time, I salted the serving platter before putting the tomatoes down to ensure ideal seasoning.

Strawberry Galette

Have I mentioned we went to Costco yet? We got a whole bunch of strawberries that needed to be used, so alas I made a galette. I used my recipe - soon to be shared here!
