It was the most perfect summer day today - high 70’s, blue skies and no humidity. To celebrate, we served a menu perfectly matched to this beautiful day. Grilled corn, grilled chicken with a cucumber tomato salad. For dessert, I made peach Melba popsicles featuring perfectly ripe summer peaches πŸ‘

Grilled Chicken

I marinated these in Greek yogurt mixed with minced garlic, salt, pepper and dried oregano. It was our first time using Costco chicken thighs and it will not be our last.

Cucumber Tomato Salad

Inspired by this NYTimes recipe by Ali Slagle, we served a cucumber, tomato feta salad alongside the chicken. It calls for some of the leftover marinade from the chicken to be mixed in with some feta for bright, tangy side.

Peach Melba Popsicle

These are so perfect in the summer. I need to remember to make more while the peaches are still this good, so we can enjoy them all winter long. It’s a Smitten Kitchen recipe which has you pour simple syrup over some raspberries, then cook the peaches in simple syrup - blend them both (separately) in a food processor, and pour them into molds alongside the best vanilla ice cream you can get - in our case, Strauss Vanilla. I might also make these with Strauss Greek yogurt in the future πŸ‘€
