We made stuffed shells this week that were out of this world π The filling was so flavorful (filled with: spinach, prosciutto, Parmesan, homemade ricotta, and other things I cannot remember!) We served it with a whole bunch of greens - roasted asparagus and a spinach & arugula salad. And, for dessert we kept things very classic: chocolate pudding and chocolate chip cookies πͺ
Mark was worried we werenβt going to have enough food π so we called Jake & Peach and asked them to bring extra snacks. Peach got very creative and made us all a fruit wrapped ham snack that was strange in theory, but delicious in reality.

Of course, recipe is from Brian Lagerstrom. The sauce was also so tasty - due to the Calabrian chiles.
Spinach & Arugula Salad
Spinach, arugula, olive oil, lemon juice, salt, toss.
Roasted Arugula
Arugula toasted in olive oil, salt & pepper. Roast @ 400Β° for 10-15 minutes.
Chocolate Chip Cookies
The sad reality is that I ran out of freezer cookie dough and I wanted to replenish my supplies. So I made these cookies half for the take away treat and half to fill my coffer.
Chocolate Pudding
I used this recipe; however, it does not give you an exact cooking temperature, but you can google βwhat temperature to cook cornstarch to, for puddingβ to make sure you are cooking it correctly.
