Spring is juuuust beginning to spring here in Northern California. The days are getting warmer, the birds are chirping and the tulips are in! To celebrate we made a humongous, two-tiered carrot cake - baked by me, and decorated by Amanda.
Sloppy Joseph’s
For our main course, Mark made a big batch of Sloppy Joseph’s - which is just a fancy name for sloppy joe’s that are homemade and not from a box 🎩
Cole Slaw
To cut through some of the richness of the Joseph, we made a simple slaw using store bought Cole slaw mix, a little mayo, mustard, and some red wine vinegar.
Salad
As is tradition, Jake made a salad - this time with a green goddess dressing!
Chocolate Chip Pretzel Cookies
This week’s takeaway treat were my favorite chocolate chip cookies from Smitten Kitchen with a few broken pretzels mixed in pretzel 🥨
Carrot Cake
I made this Brian Lagerstrom version - which has no nuts or raisins added into the batter. The cream cheese frosting was absolutely perfect, not too sweet, but just enough tang. We sent some home with Peach, who gave it to our tile guy Mitch who texted me saying, “It was the best thing I’ve ever tasted in my life and my wife was freaking out over it” 💖
