Beef Panang Curry
So the whole reason we decided to go with Thai food is because Mark makes a really good Thai curry. But then we got to menu planning and somehow ended up changing the curry recipe out for this ATK version that I would not recommend. Meat texture was weird.
Thai Fried Rice
Recipe from Hot Thai Kitchen (and she is absolutely right, if you serve it in the pineapple, people are WAY more excited about the dish)
Chicken Satay
Recipe is via NYTimes but hilariously, and totally coincidentally from Hot Thai Kitchen lady. The dipping sauce was a must. Such great flavor and heat. This could have been the main.
Pineapple upside down cake
Wanted to do something pineapple forward. Went with this King Arthur recipe. This was a perfect cake. Texture was crumbly, yet moist. Flavor from the pineapple is sweet but not overly so.
Italian rainbow cookies
We had a guest in town and she specifically requested this dessert. So not on theme, but on demand 💕
