In a total coincidence, ahead of Diwali, this weeks’ theme was Indian! We made our favorite butter chicken with a side of basmati rice and homemade garlic naan. Unrelatedly, we are officially hosting Thanksgiving this year so I have begun to cover the house in seasonal decor (aka pumpkins) 🎃
Butter Chicken
We made a double batch of Brian Lagerstrom’s Butter Chicken. Fresh spices are so critical here - also a good char under the broiler.
Garlic Naan
This dough is very similar to my pita dough (uses beer to impart a yeast-y flavor). We cooked these inside in a cast iron pan (vs outside on the grill). When they came off the heat, we literally brushed garlic butter onto them. So so good.
Mango Peach Soft Serve
This is what happens when you blend frozen mangoes, and peaches with sweetened condensed milk - you get ice cream! Stupid easy and so delicious - especially when paired with some herbs (mint).
Apple Cider Snickerdoodle’s
Imagine snickerdoodles, but better. They have a rich apple flavor in the back. So delicious and seasonal 🍎 Recipe from King Arthur.
