Peach was out of town this week so we kept things simple - roasted chicken, pilaf, & salad with homemade chocolate chip cookies πŸͺ

Roast Chicken

We followed J. Kenji’s technique of lathering the chicken in mayo before roasting. We also added a homemade chimichurri to the mayo for some herbal notes 🌿

Salad

This could not have been more simple - butter lettuce, gem lettuce, and a Dijon red wine vinaigrette.

Rice Pilaf

Rice + shallot + garlic + bay leaf cooked in chicken broth with some pine nuts added at the end. Such an easy and simple way to serve boring rice.

Chocolate Chip Cookies

I made my favorite Smitten Kitchen recipe - no bringing butter to room temperature, no overnight in the fridge (unless you want to).
