This week’s theme was “Italian red sauce”. It’s felt like a few weeks since we featured an Italian Sunday Dinner - when we put out requests for menu items, Peach requested chicken Parmesan, and so we obliged.

Chicken Parmesan

We followed Brian Lagerstrom’s recipe. The secret here is the red sauce - we tripped the amount (one for the chicken parm, one for the pasta, and one for the focaccia)

Focaccia

This is my go-to focaccia - it’s an adaptation of Amanda Fredrickson’s and Samin Nostrat’s. The secret to good focaccia in my opinion is more olive oil than you think. ou can watch me make it over here!

Spaghetti

It wouldn’t be chicken parm without a side pasta - so we made some spaghetti and topped it with the sauce.

Chopped Salad

We threw romaine, tomatoes, washed red onions, and chickpeas into a bowl and topped it with my favorite creamy Italian dressing. The oregano really shines here and makes it taste like a pizzeria.

Blackberry Crumble Pie

Peach hand picked blackberries and dropped them off at our house so I could turn them into a pie. I used an-all-butter crust with an even-more-butter crumble topping. I used lemon juice in the pie and lemon zest in the crumble. Crumble recipe was inspired by Smitten Kitchen. Jake asked for seconds - which NEVER happens. That’s how good this was.

Oatmeal Date Cookies

King Arthur published their top 40-something must bake recipes for fall - so the first Sunday dinner in September felt like a good time to start working my way through that list! First up, were these oatmeal cookies. They were okay, but I prefer oatmeal raisin.
