Mark and I have been on a sheet pan kick lately - unless we can cook it on one pan in the oven - we don't want it. They are easy to make, easy to clean and have all been super tasty!
Sheet Pan Herby Roast Chicken With Peas and Carrots
This NYTimes recipe literally calls for just dumping a bag of frozen peas and carrots onto of the chicken. I'm not sure you can even call that "cooking." It's topped with a yogurt sauce which brings a bright tang to the whole dish.
Sheet Pan Scallion Chicken With Bok Choy
I cannot stop raving about this NYTimes recipe. First up, you've got bok choy, which I LOVE and think we don't use enough. Second, you've got a rich mustard, miso, ginger garlic sauce that is so unbelievably scrumptious and addictive. You put them both with roasted chicken thighs and brown rice to drink it up, and you've got a well balanced, extremely tasty dinner.
Sheet Pan Mediterranean Chicken Thighs
This is actually the same dish we had a few weeks ago at Peach's house. It is so easy and delicious. Perfect way to use up older veggies in the fridge.
Sheet Pan Coconut Shrimp and Sweet Potatoes
Another NYTimes recipe. This one has all the flavor of a Thai curry with none of the effort. Use a full fat thick coconut cream and you will not be disappointed.
Chicken Shawarma
Mark came up with this recipe and it is maybe the most delicious meal I've had in a long time. The crispy chickpeas and cauliflower with the incredibly flavorful and perfectly roasted chicken. This dinner was absolute perfection.
Sheet Pan Chicken With Potatoes Arugula & Garlic Yogurt
Another Melissa Clark classic recipe via NYTimes Cooking. Garlic yogurt is always a good idea, and the arugula adds such a lovely brightness to this dish.
