We are still on our sheet pan kick 🦵 This week we made our chicken shawarma sheet pan (previously featured here) for the group by doubling it so two sheet pans for twice the fun and yums 😋

Sheet-Pan Chicken Shawarma

This is an LLM recipe (e.g. Claude came up with it). You marinate the chicken (bone-in, skin-on chicken thighs) in a spice blend of cumin, paprika, turmeric, coriander and cinnamon. Then you toss cauliflower, red onions and rinsed, and dried chickpeas in olive oil and salt. Place the chicken on top and roast for 40ish minutes. With a few minutes left, add the cherry tomatoes so they have a chance to melt and burst before serving. We topped with a tahini drizzle (tahini + water + lemon juice). So flavorful, and gluten free 🆓

Basque Cheesecake

Peach has been craving cheesecake lately, so I decided to make this easy, smaller portioned version (you end up with a loaf pan vs a whole 12 inch round). I had to make it twice, since I forgot the heavy cream on my first attempt. I served both for a little taste test, and the with-cream version definitely won. It was lighter and airier.

Chocolate Chip Cookies

Went with my all time classic Smitten Kitchen recipe as it does not require room temperature butter. These are always a hit 🍪
