Itโ€™s been gray and chilly here this week, so what better food than Chili! We made an updated version and an updated cornbread.

Chili

We went with this Americaโ€™s Test Kitchen recipe, which features ancho chilis, chipotle peppers in adobo sauce, pinto beans and whole tomatoes. It had such a deep, richly, chili flavor. Enough heat to call itself chili, but also perfectly balanced. Would make again ๐Ÿ˜‹

Cornbread

Last time we had chili, we served it with a King Arthur cornbread that did not deliver on corn flavor - it only used cornmeal. This time we set out to achieve real corn flavor and went with this Smitten Kitchen version that absolutely delivered. It calls for frozen sweet corn ๐ŸŒฝ which made all the difference.

Rice Krispie Treats

These are some of my all time favorite treats - I always make the Smitten Kitchen version which calls for browning the butter. It works every time.
